The Culinary Historians of the Philippines (CHOP) is a non-profit sister organization of the Culinary Historians of Washington, D.C. (CHoWDC). We are not historians in the academic or scholarly sense; we are students of culinary history who want to give back to society through culinary-based programs. Our mission: To study, promote, and help preserve the history and heritage of Philippine cuisine and culinary customs/traditions; to implement advocacy programs; and to study the cuisines of other countries. CHOWDC MEETING in WASHINGTON, D.C., December 12, 2016

Regee Newport attended the December 12, 2016 meeting of CHoWDC (Culinary Historians of Washington, DC ) CHOP's sister organization the U.S.

The afternoon's feature was a very interesting lecture by Dr. Libby O'Connell, an executive at The History Channel, on the cuisine of the Gilded Days (late 19th century). As usual, the session was well-attended, with many first-time guests registering for membership after the meeting.

Members brought goodies to snack on for the afternoon tea. It was great to see old friends again after our long absence from meetings. I got the chance to briefly talk about CHOP. I try to attend their meetings whenever I'm in D.C.

CHOP'S Board of Directors hosted a delightful potluck dinner last night for all the movers and shakers who were instrumental in the successes of CHOP's food tours and events during 2016. The dinner was held at the lovely home of our President, "Generalissima" Pia Lim-Castillo.

The occasion was also a fitting time to announce that our next President beginning next year is none other than our beloved Ige Ramos, continuing CHOP's super lucky streak in having at its helm excellent leaders in the culinary heritage field.

Marian Orchard Shrine (8:30-9:30)
Let’s start our tour in a serene Marian shrine. Have a welcome snack of Lipa bonete and pan de sal filled with kesong puti, Lipa honey and burong paho paired with kapeng barako and salabat. Tour the grounds, say a prayer in their chapel, and imagine your next Visita Iglesia here.

Travel to The Taal Lake Conservation Center (TLCC) & “KAPUSOD”

Taal Lake Conservation Center (10:00-11:30)
Located right on the shore of Taal Lake. After two short talks and personal stories on Lipa history and culture as well as on Lipa as “The Little Rome of the Philippines,” by Lipena CHOP members Inez Reyes and Nanette Medina.
Take a break and have a “pica-pica” (bite size tasting) snack of Lipa bibingka, suman haba, suman dapa and puto with latik – washed down with cold sinturis juice.
Enjoy another interesting talk on Taal Lake conservation and the slow food movement by Lipena Atty Maria Paz “Ipat” Luna Severino, who also owns “Kapusod,” a bed and breakfast right beside TLCC.

PAMPANGA FOOD TOUR, Saturday, August 13, 2016

Dateline Angeles, Pampanga, one stormy Saturday in August 2016.

A total of 54 brave souls refused to be intimated by the threat of rains and flooding in the Pampanga area, and proceeded with the planned food tour; they did not regret it.

CHOP considers itself very lucky indeed, because the whole tour was painstakingly organized by none other than the renowned Chef Sau del Rosario, with the much-appreciated collaboration of Chef Edith Singian (we are proud to say both are CHOP members). The result was the largest group that CHOP has ever assembled before (we've had to turn down late registrants as the quota was quickly filled), and the most incredible day of learning about Pampanga's cuisine and indulging in not one, but two fiesta-like meals--a heavy brunch and then a late, heavier, lunch. On offer was Chef Sau's signature Kapmpangan dishes as well as other local delicacies, sweet and savory alike.There were also several cooking demos of Kapampangan fare. 

Owing to the bad weather and threats of flooding in some areas of Pampanga, Chef Sau had to reconfigure the planned itinerary, cancelling those events in venues that had already flooded (among them Bacoor, Mexico, Guagua, and Candaba). We got lucky in that Angeles City, Chef Sau's hometown, was not flooded; it was where the planned two main meals were going to be held -- the brunch at Chef Sau's elegant restaurant, Cafe Fleur, and the proper lunch at the ancestral Museum of Angeles City.

MALABON TRICYLE TOUR, Saturday, April 30, 2016



A unique tour tailor-made by CHOP member Chef Melissa Oreta just for CHOP, the group went from one stop to the next in tricycles (on account of the small roads). Morning assembly was at the Baroque San Bartolome Church which was built in 1564.

ANTIPOLO FOOD TOUR, Saturday, April 2, 2016





This was a full day of communing with God and nature.

First stop was the Nuestra SeƱora de la Annunciata Parish, also known as Boso Boso Church, the oldest church in Antipolo; it was first built in the late 16th century. 

Next stop was Carolina's Bamboo Garden, a vast expanse devoted to indigenous and exotic varieties of bamboos, whose focal point was the "Bambuseum," a gene bank conservation area for various bamboo species.

Our first event for 2016 is both a food trip around Quezon City and we will end up with our annual meeting at Serye and have a traditional merienda before heading home.
