This was CHOP's first sponsored event, which was a well-attended affair and
which brought us many new members. Amy spoke about the latest project of her
non-profit foundation, Ang Sariling Atin Culinary
Heritage Institute (ASA), which is dedicated to documenting and preserving
Philippine
culinary traditions and native ingredients through the establishment of community kitchens in the Philippines. Their first community kitchen in Dumaguete has been built, with assistance from Silliman University, and will soon be operational. ASA will develop scientifically based research methodology to gather data on flavors of the different regions of the country and, with the help of academicians, write a book on “Discovering the Filipino Palate: the Food, Flavor preferences and Meals of the Filipino People.” Now that CHOP has obtained its non-profit status, we hope to collaborate with ASA on its community kitchens program once the appropriate funds are raised to finance our side of the operation.

Culinary Historians of the Philippines
(CHOP) is an educational, nonprofit organization dedicated to: (1) the study of the history and evolution of
the regional foods, cuisines, and culinary customs of the Philippines as well
as those from all parts of the world; and (2) advocacy for disseminating information
on nutritional and economical cooking through outreach programs, workshops,
lectures, and field trips.

Women in the United States,” Amy Besa is a successful restaurateur in New York
(Cendrillon in SoHo, 1995-2009; and now Purple Yam in Brooklyn); the author
(with her husband, Chef Romy Dorotan) of the international award-winning
cookbook, “Memories of Philippine
Kitchens ” (recently updated and now available in Manila); and most
recently the founder of Ang Sariling Atin
Culinary Heritage Institute (ASA), a
Manila-based nonprofit organization which aims to document and preserve
Philippine culinary traditions and native ingredients through the establishment
of community kitchens in both rural and urban areas in the Philippines.
