About CHOP

The Culinary Historians of the Philippines (CHOP) is a non-profit sister organization of the Culinary Historians of Washington, D.C. (CHoWDC). We are not historians in the academic or scholarly sense; we are students of culinary history who want to give back to society through culinary-based programs. Our mission: To study, promote, and help preserve the history and heritage of Philippine cuisine and culinary customs/traditions; to implement advocacy programs; and to study the cuisines of other countries. Amy Besa Lecture, March 7, 2013 (Makati Sports Club)

Amy Besa Talk, "Ang Sariling Atin"
Thursday, March 7, 2013
Makati Sports Club, Club Café
L.P. Leviste cor. Gallardo Sts.
Salcedo Village, Makati City
Amy Besa with some of the CHOP members/organizers of the Lecture:
Nina Colayco, Nanette Medina, Meng Perez, Amy Besa, Rica Cortes Rentzing,
Nora Tolentino, Ada Bernal, Gracita Tolentino Sieber, and Regee Newport.
This was CHOP's first sponsored event, which was a well-attended affair and which brought us many new members. Amy spoke about the latest project of her non-profit foundation, Ang Sariling Atin Culinary Heritage Institute (ASA), which is dedicated to documenting and preserving Philippine
culinary traditions and native ingredients through the establishment of community kitchens in the Philippines. Their first community kitchen in Dumaguete has been built, with assistance from Silliman University, and will soon be operational. ASA will develop scientifically based research methodology to gather data on flavors of the different regions of the country and, with the help of academicians, write a book on “Discovering the Filipino Palate: the Food, Flavor preferences and Meals of the Filipino People.” Now that CHOP has obtained its non-profit status, we hope to collaborate with ASA on its community kitchens program once the appropriate funds are raised to finance our side of the operation.

The Culinary Historians of the Philippines (CHOP) is an educational, nonprofit organization dedicated to:  (1) the study of the history and evolution of the regional foods, cuisines, and culinary customs of the Philippines as well as those from all parts of the world; and (2) advocacy for disseminating information on nutritional and economical cooking through outreach programs, workshops, lectures, and field trips.

Come join us at the first of CHOP’s planned events, an informal talk about Philippine food culture advocacy, and learn what defines cuisine that is truly ours!
